Crispy Baked Chicken Wings with Maple-Garlic Seasoning
What You'll Need
For the Wings:
- 4½ lb of chicken wings
- 2 tbsp of baking powder (not baking soda!)
- 1 tsp of salt
- ½ tsp of black pepper
For the Maple-Garlic Seasoning:
- 3 tbsp of pure Canadian maple syrup
- 2 tbsp of soy sauce
- 1 tbsp of Dijon mustard
- 2 cloves of garlic, minced
- 1 tsp of smoked paprika
- ½ tsp of cayenne pepper (optional, for heat)
- 1 tbsp of apple cider vinegar
- 1 tbsp of olive oil
- Fresh ground pepper, to taste
- 2 tbsp of finely chopped fresh chives to garnish
Step-by-Step Instructions
- Prep the wings:
- Preheat your oven to 220°C (425°F).
- Pat the wings completely dry using paper towels. This helps them crisp up.
- Toss wings in baking powder, salt, and pepper in a large bowl until evenly coated.
- Line a baking sheet with foil and place a wire rack on top, greased with olive oil. (This will help with air circulation so your wings get crispy all around!)
- Arrange wings in a single layer on the rack.
- Place them in the oven:
- Bake for 25 minutes, then flip the wings and continue baking for an additional 20-25 minutes, or until the wings are golden brown and crispy.
- Make the seasoning sauce:
- While the wings are baking, whisk together all seasoning ingredients in a small saucepan.
- Simmer over medium heat for 3-4 minutes, until slightly thickened. Set aside.
- Coat the wings:
- Once the wings are done baking, transfer them to a large bowl.
- Pour the warm maple-garlic sauce over the wings and toss well to coat. Garnish with chives and serve.
