At Wild Meadows Farm, we know that great meals don’t always need hours in the kitchen, but sometimes, when you do have the time, it’s worth going all in. That’s why we’re sharing two ways to cook Bavette steak:

  • One for when you want to savour every minute.
  • One for when life’s chaotic (but dinner still needs to taste amazing).

Whether you're feeding picky eaters, hungry family members, or just looking to treat yourself after a long day, this cut will do the trick!

What is Bavette Steak?

All 100% grass-fed and finished, antibiotic- and hormone-free, this lesser-known cut is one of our favourites! Bavette (a.k.a. flank’s beefier cousin) is rich, tender when sliced right, and full of flavour. It’s the kind of cut that turns a simple supper into something special, and it comes straight from the belly of the animal, where all that good marbling lives.

The Slow & Savoury Bavette (Weekend-Style)

Perfect when: You've got a lazy Sunday or you’re hosting the in-laws.
Tastes like: Smoky, juicy, maple-glazed perfection!

What You’ll need:

  • 1.5 to 2 lb of bavette steak
  • 3 cloves of garlic, minced
  • 1 tbsp of Dijon mustard
  • 2 tbsp of soy sauce
  • 1 tbsp of balsamic vinegar
  • 2 tbsp of olive oil
  • 1 tsp of maple syrup
  • Salt, pepper, and fresh thyme or rosemary

Step-by-Step Instruction:

  1. Marinate it:
    • Whisk all the ingredients together and let the steak soak in the marinade for at least 4 hours, or overnight if you can plan ahead.
  2. Grill or sear:
    • On medium-high heat, grill or sear steak for 4 to 5 minutes per side. Don’t move it too much. Let it get those beautiful char marks!
  3. Let it rest:
    • You can set the cooked steak aside for 4 to 5 minutes. It will give you time to grab a drink and set the table.
  4. Slice across the grain:
    • This makes it melt-in-your-mouth tender!

The Quick & Tasty Bavette (Weeknight-Style)

  1. Season it fast:
    • Salt, pepper, garlic powder, and you're done!
  2. Get that pan hot:
    • Sear for 3 to 4 minutes per side in a bit of oil or butter.
  3. Rest and slice:
    • Allow it to rest for 5 minutes, then slice against the grain.
